Air Dried Mullet Roe (Bottarga)

Bottarga di muggine is grey mullet (muggine) roe cured with salt and it is a Sardinian and Sicilian specialty. Bottarga di tonno (tuna roe) is also popular, mostly in Sicily, but it’s a bit dried and more sharp in flavor. Bottarga makes a delicious salty and sea-flavored topping for pasta, grated or shaved (used much like you would truffles).
